Stuffed potatoes with Baltic herring fillets

4 large potatoes (fresh out of the ground)

1 onion

4 tbsp of butter

3 tbsp of English mustard

1 pack of Baltic herring fillets

100 g of grated cheese

Oil for frying

Salt and pepper for seasoning

Dill or chives

Sour cream

 

Boil the potatoes (unpeeled) in salted water for around 15 mins or until semi-soft. Allow the potatoes to cool a little before cutting them in half lengthways and scooping them out using a small spoon. Finely chop the onion and fry in the oil until golden brown. Use a fork to mash the potato you scooped out of the skins, mixing in the (room-temperature) butter, mustard and fried onion. Season with the salt and pepper. Place an equal amount of the mashed mixture in each potato skin and sprinkle with the grated cheese. Bake at 200 °C for 10-15 mins.
