Pan-fried Baltic herring with a cheese & corn coating

1 kg of Baltic herring

200 g of plain cornflakes

50 g of hard cheese (grated)

Lemon juice

Salt and pepper

Oil for frying

 

Descale the fish and remove the tails, if desired.

Blitz the cornflakes to a breadcrumb consistency. Pour into a bowl and add the grated cheese. Roll the fish pieces in the corn & cheese mixture, coating them as thickly as possible. Heat the oil in a pan and fry the coated fish on a medium heat until golden and crispy.
