1.5 tbsp of olive oil
1 shallot (chopped)
100 ml of dry white wine
500 ml of fish stock
6 Baltic herring fillets (smoked)
2 slices of black bread
100 ml of thickened cream (35%)
Black pepper
Peel and chop the shallot and rinse the fish. Warm the onion in the olive oil in a pot on a medium heat until glassy, then add the white wine and boil until the liquid has reduced by half. Add the fish stock and again reduce by half. Add the fish fillets and black bread. Pour all of the ingredients into a blender and blitz until smooth. Return to the pot, add the cream and heat through. Season with the pepper. Add some sour cream or cream cheese when serving, if desired.
