Baltic herring with garlic

1 kg of Baltic herring (or vendace)

10 cloves of garlic

Fresh dill (chopped)

Oil

Lemon juice (if desired)

Salt and black pepper

 

Descale and rinse the fish, allow to drain and pat dry using a tea-towel or kitchen paper. Finely slice the garlic. Grease a low-sided 26 cm baking tin or oven dish with oil and place half of the garlic slices on it.

Sprinkle each of the fish fillets with a little of the dill and some salt and pepper. Reshape them to resemble fish. Place them in the baking tin or oven dish. Drizzle with a little oil and sprinkle with the remaining garlic slices. Squeeze over some lemon juice, if desired.

Bake in a pre-heated oven at 150 °C for 50-60 mins.

 

Top tip:

To improve the look of the dish, place the fish in a round oven dish with their tails pointing towards the centre. This will create a lovely flower shape.
