Baltic herring marinated with jalapeños

1 kg of fresh Baltic herring

Salt

3 eggs

Wheat flour

Olive oil

 

Marinade:

1 litre of water

1 carrot (thinly sliced)

1 onion (thinly sliced)

1.5 tbsp of sea salt

3.5 tbsp of sugar

2 tbsp of vinegar (30%)

3 jalapeños (sliced)

10 pimento seeds (lightly ground)

10 pepper corns

8 juniper berries (lightly ground)

8 cloves

4 bay leaves

 

Clean and rinse the fish with cold water, drain and place in a bowl. Shake over a little of the salt and allow to stand for an hour.

Boil the marinade at a low temperature for 5-6 minutes.

Coat the fish in the egg and flour, fry in the olive oil until golden brown and place in the marinade. Allow to cool and then snack away! They will taste even better the next day.
