600 g of Baltic herring fillets
1 tsp of salt
0.5 tsp of black pepper
100 g of dill (chopped)
A drizzle of oil
Onion mixture:
1 onion (large)
1 leek (large; light-coloured part only)
2 tbsp of oil
1 tbsp of lemon juice
Salt and black pepper
100 g of grated cheese
To serve with potatoes or rice and salad
Peel and slice the onion and slice the leek. Warm the onion and leek in the oil in a pan on a low heat for a few minutes. Add the lemon juice, grated cheese, salt and pepper and mix together. Place in a uniform layer in a small oven dish. Place the fish fillets on your preparation surface, skin-side down. Sprinkle with the salt and pepper and a little of the dill. Roll up starting from the head and place on top of the onion mixture so that the rolls are ‘upright’. Drizzle with a little of the oil. Cover with aluminium foil or a lid. Bake at 200 °C for 15 minutes. Sprinkle over the chopped dill. Serve immediately with boiled potatoes or rice and a side salad.
